Kudhume (Kurume) Coffee
- Originating from the Guji and Gedeo regions, Kudhume (or Kurume) is a unique, indigenous tree known for its resilience, consistent fruiting, and small, disease-resistant leaves. Named after the tree, the local landrace coffee variety shares these traits, producing small fruits year-round with a compact canopy and vibrant green new growth.
- The coffee features a juicy, syrupy body, with complex flavors of tropical fruits like papaya and mango, citrus notes of orange, and floral hints of jasmine. Notable JARC varieties like 74110, 74112, 74148, and 74158 exhibit similar characteristics and may even be reclassified as Kurume types.
Processing
- Kudhume coffee is processed with care, drying for 18-21 days on African beds with geotextile mesh. The cherries are visually inspected daily, and undesirable fruit is removed. To ensure even drying, the beans are manually rotated six times a day. Once the moisture content reaches 9.5-10.5%, the cherries are harvested. This natural processing method, combined with ideal growing conditions, contributes to the coffee’s exceptional quality.
